Design and manufacturing a machine for shrimp paste on sugar cane

Abstract

Shrimp paste on sugar cane (namely, Chao tom loi mia in Vietnamese) is a traditional food. The food has core with sugar cane covered by a layer of paste of meat and shrimp. Currently, most of the shrimp paste on sugar cane in the market are made by hand, so the research and development of an automatic machine for making shrimp paste on sugar cane is neccesary. This paper describes the research, design and development the machine with capacity of 240 products/hour including delivery of sugar canes, paste of shrimp and meat, extrude and forming. The products qualities meet the requirements of food-processing enterprises such as high productivity, uniform product quality, food safety assurance, low initial investment costs as well as low maintenance.
